Wales is a treasure trove of vegetarian heritage and simple but delicious vegetarian recipes. Potato cakes, Welsh Rarebit made with cheese and beer on toast, various dishes with leeks and lavabread, needing a rather acquired taste for something that seems to be nothing more than boiled seaweed. Nevertheless the Welsh still  hold the title for  eating most fruit and veg per head in the UK and although it's still miserably below the modest recommendations of 5 a Day, the welsh should still to be congratulated.

The Welsh patron saint, St David, is alleged to have been a vegan,  but that jewel of information seems to have passed by many of the pubs and cafes in Wales. However,  if you know where to look you can find some truly delightful guesthouses, B&B's Hotels and restaurants that are passionate about fulfilling their vegetarian guests' dreams and who will do their utmost to please you, leaving you desperate to facebook or twitter your friends and tell them how 'dead brilliant' the place is.

If time is against you Wales is much closer than Scotland but still full of Castles, caves, mountains, coves, waterfalls, history, wildlife, deserted beaches and lovely people waiting to be discovered by you.
